Calling all Lunch ideas!



I have a "Mommy Blog Challenge" for all of you! One thing that will help me enjoy my journey even more is to make lunch time less stressful! I totally stress out when 12:00 pm rolls around each day accompanied by growling tummies of my 2 little ones and myself! Please share some fav lunch ideas! I absolutely love leftovers...but I don't always have them available. Help! Those of you with admin access, please post a new post with your idea with any details so that we can all be blessed by your fabulous Lunch Ideas. If you don't have access...we still want to hear your ideas! You are welcome to comment on this post! (If you want access to post ideas via the blog...let me know and I can send you an invite).   1. These may not be original at all but we lean toward making: frozen pizza, mac 'n cheese, chicken nuggets, crackers with slices cheese and meat, top roman noodles, chicken noodle soup, PB&J, quesadilla, and toasted cheese sandwiches.

  2. Here's some fun recipes:

    Ham and Cheese Pockets

    Can of crescent rolls (I get the small can of 4)
    Slice of tavern ham
    Shredded cheddar cheese

    Lay the dough triangles flat. Place some small shreds of ham on each triangle and top with a little bit of cheese. Fold the dough on all sides to make a little flat square. Bake according to the directions on the crescent roll can (375 for 13 minutes I think). Let cool and hand over to your little one to eat.

    Spinach balls (great way to get them to eat spinach!)

    3 eggs beaten
    1 box of frozen spinach - thawed and squeezed of all excess water
    1 cup of bread crumbs (or make your own in a food processor with regular bread)
    1/2 stick butter melted
    1/2 cup Parmesan cheese

    Mix all ingredients together and form into small balls (about 1/2 inch). Place on cookie sheet, freeze and store for later use or cook immediately at 350 for 15 minutes.

    Great way to get the veggies! It makes so many that it's economical to make a few and freeze the uncooked for later.


    Easy Black Bean Quesadilla:
    - canned black beans, drained
    - Part-skim mozzarella cheese
    - Whole-grain/whole wheat tortillas
    - Optional: corn, tomatoes

    Mash up some of the black beans and spread them over half the tortilla, sprinkle with mozz. cheese and add whatever other toppings you want. Sometimes I add a teeny bit of ranch dressing for some punch. Just pop it in the microwave for 45 seconds, let it cool off a little and cut it into little bite-size pieces. Yummy!

    Some other ideas: Fish sticks, spaghetti, bagels with cream cheese or jelly, English muffins with cream cheese or jelly or you could use them to make mini pizza, morningstar farms vegetarian mini corn dogs and the broccoli cheddar veggie bites, and ravioli.

  3. I am always looking for new lunch ideas!
    We usually do the ususal Macaroni and chesse with corn, corndogs, french fries and chicken nuggets, chicken noodle soup, peanut butter or cheese sandwiches, burritos, chicken cordon bleu's.

    To give roman noodles a twist cook roman noodles like usual and than put them on top of flour torillas with melted cheese and roll it up.

    Another easy one is little pizza's buy buscuits in a can and put tomato sauce,cheese, and ham,ect. on it and cook for 12 minutes.

  4. So everyone has awesome ideas. My little one loves noodles and veggies. So another top romen idea is to make it as desiered then add small cubed carotts and peas. She loves them, quick, easy, and a little more healthy.

  5. Laina is still getting her molers in gear so I don't do anything fancy--but her favorite is a cheese and ham tortilla, I cut it up into small pieces with a pizza cutter.

  6. I just stumbled across your blog....cute! I'm not sure if you have heard of "Hot dog boats" but they are yummy! For bigger kids you cook and cut the hotdog down the middle and fill with mashed potatoes and top with shredded cheese! My kids are younger so I cut up the dogs and mix with cheese and mashed potatoes(instant work best) in a bowl and they LOVE IT! My husband made fun of me until he tasted it and then he ate the whole bowl!
